Hotel Victoria is a modernist brick building completed in 1938 by architect N. Thoresen. The hotel is located in the center of Fredrikstad, facing the park, and is an important part of Fredrikstad's identity and history.

The hotel had new owners in 2021 and made major renovations in 2022. Hos Martin now operates a bakery and restaurant on the 1st floor, which Ørseng Interior Architecture has designed. The interior is adapted to the operation of Hos Martin and their profile, while at the same time safeguarding the building's clear modernist expression.

The bakery shop appears bright and delicate with large surfaces for displaying baked goods. The serving counter continues into the restaurant, where the atmosphere is more subdued. The serving counter ties the rooms together and acts as a focal point in the room.

A former lounge with wall-to-wall carpets and upholstered sofas was converted into an event hall where the feeling of a backyard has been emphasized. The wall-to-wall carpets were removed and tiles were chosen instead. Wooden tables, hanging lamps and green plants further emphasized the outdoor feeling. The result is a room that can be used in connection with the restaurant or rented out for events.
